Great Fiber Oat Cookies August 8, 2017 CW20


2 sticks butter, softened
½ cup brown sugar, packed
½ cup sugar
2 egg whites
½ tsp vanilla
1 cup oat bran
½ cup flour
½ tsp baking soda
2 cups rolled oats
1 cup pitted prunes, chopped
2/3 cup slivered almonds.


With a heavy mixer, cream butter with sugars until fluffy. Add egg whites and vanilla, beating until mixed. Mix together oat bran, flour, and soda. Beat this into the egg and sugar mixture. With a wooden spoon, blend in rolled oats, prunes and almonds. Using about a TBSP of the mixture, flor balls which you flatten onto a lightly greased cookie sheet. Bake 12 to 15 minutes in a preheated 375 deg oven or until lightly browned. Allow to cool on the cookie sheet for 3 or 4 minutes before moving to a rack to cool completely.
Some irreverent person nick named these as “Cookies to Go”. I have no idea what they were talking about.
