Chinese Noodles in Peanut Butter Sauce Friday, August 4, 2017


8 oz Chinese wheat flour noodles
2 pickling cucumbers
½ cup smooth peanut butter
¼ cup soy sauce
2 TBSP sesame oil
½ tsp cayenne pepper or Chinese pepper paste
2 TBSP sugar


Cook noodles in boiling water. Drain. Peel the cucumbers, remove seeds and cut into thin strips about 1 inch long. Blend all remaining ingredients. While the noodles are still warm, toss with the cucumbers and the sauce mixture. Place in a covered dish and refrigerate overnight. Serve cold as a side dish.
