Pumpkin Waffle Iron Cookies Friday, November 17, 2017


1 1/3 cups sugar
1/2 cup shortening (or, if you prefer, butter)
2 eggs
1 cup canned pumpkin
1 tsp. vanilla
1 tsp. salt
1 tsp. baking powder
3/4 tsp. cinnamon
3/4 tsp. nutmeg
1/4 tsp. ginger
2 1/2 cups flour

1 3/4 cups powdered sugar
1 1/2 tsp. Cinnamon
1/4 cup melted butter
1/2 tsp. vanilla
2 TBSP milk


Cream sugar and shortening and then add other ingredients, Mix well. Heat waffle iron. Drop batter by TBSP’s on to hot waffle iron making 1 in each section. Bake 1 to 1 1/2 minutes. Place on racks to cool.

For Frosting
Mix together. It will be runny. Place the frosting in a ziplock bag. Cut a small hole in the corner and pipe the frosting on the cookies. Let the frosting set up.
