2 cups fresh cranberries
1 cup sugar
1 cup orange marmalade
1/3 cup grated orange rind
½ cup crystallized ginger (chopped fine)
1 ¼ cup pecans or English walnuts (chopped coarse)
DirectionsMix whole cranberries and sugar. Cover and cook in the microwave for 7 or 8 minutes, stirring once. Add all other ingredients and mix well. Allow to cool and store in the refrigerator in a tightly covered container.
This recipe was a gift from the late Ruth Defriese who was a great lady and a good friend. We first made it in 1989. It is good as a cranberry sauce but is as sweet as a marmalade. It is perfect on a toasted English muffin with a little cream cheese.
