Boston Half-time Beans Thursday, February 1, 2018



Ingredients

1 Pound dried beans, soaked
1/2 green bell pepper, seeded and cut into large chunks
2 Tablespoons olive oil
1 medium onion, chopped
1 clove garlic, crushed
1 Teaspoon dried oregano
1/2 Cup tomato sauce
1 Tablespoon tomato paste
1 large potato, peeled and cubed
1/2 Teaspoon salt or to taste

Directions

Place the beans in a pot with 8 cups of water and the green bell pepper and bring to a boil. Cover and boil over moderate-low heat until the beans are tender. In a skillet or frying pan, heat the olive oil and add the onion, garlic, oregano, tomato sauce, and tomato paste. Sauté on moderate heat for 5 minutes. Add onion and tomato mixture to the beans and add the potato and salt. Cover and cook over high heat until water is boiling, about 5 minutes. Lower the heat and simmer, covered, for 30 minutes or until beans are completely tender and sauce has thickened.
