1 pineapple, peeled, cored, and sliced
2 teaspoons sugar
1/8 teaspoon cayenne
1/8 teaspoon salt
4 tablespoons coconut milk
3 lime wedges
1 tablespoon toasted coconut flakes, optional, for garnish
DirectionsOil grates of a grill or spray a grilling pan lightly. Set grill to medium-high heat. When hot, place pineapple slices on the grill and cook 2 to 3 minutes per side until lightly charred. Remove pineapple to a serving plate.
In a small bowl, mix together sugar, cayenne, and salt. Sprinkle over the pineapple. Drizzle with coconut milk. drizzle with lime juice. If using, sprinkle with coconut flakes. Serve warm or at room temperature. These are nice with a small scoop of sherbert.
