Turkey Fried Rice Thursday, November 23, 2017


1 TBSP cooking oil
2 cups left-over turkey cut into small pieces
1/4 cup chopped carrot
1/4 cup chopped broccoli
1 green onion, chopped
1 egg, beaten
1to 2 cups cold cooked rice
1/4 cup frozen peas
3 TBSP soy sauce
1/8 tsp garlic powder
1/8 teaspoon ground ginger


Heat oil in a large non-stick skillet over medium heat. Cook and stir carrot, broccoli, and green onion in hot oil until vegetables are tender-crisp. Add turkey continue to stir until hot through, 7 to 10 minutes. Remove turkey mixture to a bowl and return skillet to medium heat. Scramble egg in the skillet until completely set. Return the turkey mixture to the skillet. Stir rice, peas, soy sauce, garlic powder, and ground ginger into the pork mixture; cook and stir until heated through, 7 to 10 minutes.
