Ginger Bran Muffins Tuesday, August 15, 2017 CW20


¼ cup fresh ginger, grated or chopped very fine
½ cup sugar
1 egg
1 ½ cups buttermilk
3 TBSP cooking oil
1 cup flour
1 ½ cups oat bran
1 tsp each, baking soda and salt


Beat the egg and mix thoroughly with the ginger, sugar, milk and oil. In a separate bowl, mix together the flour, salt, soda and bran. Stir the liquid into the dry ingredients, just to moisten, do not overmix. Spoon into greased muffin tin, filling each tin ¾ full. Bake 15 to 20 minutes in a preheated 375 deg. Oven.
