Applesauce Muffins Tuesday, January 2, 2018 CW20


2 cups self rising flour
1/3 cup Splenda (or sugar)
½ tsp cinnamon
¼ tsp nutmeg
1 egg
1 cup applesauce
½ cup 2% milk
3 TBSP vegetable oil


Preheat oven to 425 deg. Grease muffin cups. Stir together flour, Splenda (or sugar) cinnamon and nutmeg in mixing bowl. Beat egg in separate bowl. Stir in applesauce, milk and oil. Add liquid mixture to dry ingredients, stirring just until blended. Batter will be slightly lumpy. Spoon batter into prepared muffin cups, gilling each 2/3 full. Bake for 18 to 20 minutes or until golden brown.
