Quick and Easy Spinach Dip Tuesday, October 3, 2017 CW20


1 10 oz box frozen spinach, thawed
1½ cups store-brought hummus (original or flavored)
4 pitas
2 TBSP olive oil
¼ tsp salt


Brush both sides of each pita with some oil and sprinkle lightly with salt. Cut each pita into 6 triangles and transfer to a baking sheet. Bake until golden, about 10 minutes.
Squeeze the spinach to remove any excess liquid. In a food processor or blender, puree the spinach and hummus. Spoon into a dish and serve with the pita chips.
If you do not want to bother with the pita triangles, you will find some good pita chips in the deli department. If you do not mind the light saltiness, small tortilla chips like Frito Scoops will also do nicely.
