Christmas Morning Casserole Friday, December 15, 2017


1 lb mild pork sausage
1 lb hot pork sausage
1 30 oz pkg frozen hash browns
1½ tsp salt, divided
½ tsp pepper
1 cup shredded Cheddar cheese
6 large eggs
2 cups milk


Cook sausage in large skillet over medium high heat, stirring until sausage crumbles and is no longer pink. Drain well. Prepare hash browns according to pkg directions using ½ tsp salt and pepper. Stir together hash browns, sausage and cheese. Pour into a lightly greased 9x13” baking dish. Whisk together eggs, milk and remaining 1 tsp salt. Pour evenly over potato mixture. Bake at 350 deg for 35 to 40 minutes.
This dish will work well if prepared the evening before. Cover and refrigerate. Remove from refrigerator about 30 minutes before putting into the oven and proceeding as above.
