Baked Tilapia Tuesday, April 1, 2008


16 to 18 Ritz crackers
1/4 cup Parmesan cheese, grated
3 TBSP olive oil
1/2 tsp Italian seasoning
4 Tilapia fillets About 5 or 6 oz each
1 TBSP each mayonnaise and Dijon mustard
salt and pepper to taste (do not use too much)


Heat oven to 400 deg. Spray a baking pan with cooking oil spray. Crush crackers in a plastic bag and add cheese, oil and seasonings. Shake to mix. Place the fish on the baking pan without the sides touching. Mix the mayo and mustard and spread evenly over the fish (about ½ TBSP each fillet). Dust with the salt and pepper. Distribute the crumb mixture evenly over the fish. And press into the mustard mixture. Bake for about 15 minutes or until fish flakes easily with a fork.
