Gator and Chicken Jambalaya First at 4 Friday, September 19, 2008


4 TBSP oil
1 lb gator tail, cut into chunks
1 to 2 lbs boneless skinless chicken thigh fillets, cut into chunks
1 cup green bell pepper, chopped
1 cup onion, chopped
1 cup celery, chopped
2 cans diced tomatoes, undrained
2 cans chicken stock
2 cups Uncle Ben’s Original rice
hot sauce to taste
salt and pepper to taste


In a heavy, large pot, heat oil and add gator and chicken, cook on high, stirring until browned. Add pepper, onion and celery and continue to cook, stirring until vegetables are wilted. Add tomatoes and stock and bring to a boil. Cover and allow to simmer 15 to 20 minutes. Stir in rice, cover and cook 25 minutes. Turn off and allow to stand 5 minutes before serving.
