Low Country Shrimp with Blue Cheese Grits


10 low country shrimp
1 tsp garlic, chopped
1 oz olive oil
1 tsp bacon bits, use real bacon and fry it crisp and crumble it
1 TBSP mushrooms
1 tsp chives (or green onions)
3 oz fresh spinach


Saute the shrimp in olive oil with garlic, mushrooms, bacon, spinach and chives for about 10 minutes or until shrimp are pink and firm to the touch. If you wish, slide shrimp on a skewer. Serve over blue cheese grits.
Blue Cheese Grits

1 cup stone ground grits
1 quart chicken stock (4 cups)
1 tsp salt
1/4 tsp pepper
1/4 tsp cayenne pepper
3 oz blue cheese crumbles

Bring stock to a boil, Stir in grits and cook until thick. Stir in remaining ingredients and continue to cook until cheese is melted. Serve hot.

A word of advice. Don’t limit these great grits to this dish. They would be wonderful with grilled chicken or as a side dish for roast beef. Or serve braised beef over them just as we suggested with the shrimp. These are good.
