Oven Roasted Fish with Vegetables Tuesday, November 10, 2009


4 fresh or frozen fish fillets (use any good white fish like cod or talipia)
1 10 oz pkg frozen peas, thawed
4 oz fresh button mushrooms, halved
3/4 cup grape tomatoes
1 small onion cut into very thin wedges
olive oil flavored cooking spray
2 tsp snipped fresh dill


If fish is frozen, thaw and pat dry. Preheat oven to 425 deg. Combine vegetables and spray with cooking oil spray and dust with salt and pepper. Toss lightly. Spray a large baking pan with a rim with cooking oil spray and arrange vegetables down one side of the pan. Roast about 10 to 12 minutes. Remove from oven and stir vegetables. Arrange fish fillets down the remaining side of the pan. Spray with cooking oil spray and sprinkle lightly with salt and pepper. Return to oven and roast about an additional 12 minutes or until fish flakes easily. Place onto 4 individual plates and arrange vegetables over fish. Sprinkle with dill and serve hot.
