Easy Fruit Salad Monday, June 7, 2010


2 medium bananas, peeled and sliced
2 medium apples, diced
the juice of 1 lemon
1 20 oz can pineapple tidbits (with juice reserved)
2 cups strawberries, sliced
2 cups grapes
¼ cup nuts (pecans, walnuts, cashews, whatever), chopped
1 1 ½ oz box sugar free instant vanilla pudding mix
½ cup water


In a large mixing bowl combine apples, bananas and lemon juice. Toss to coat. Add pineapple, strawberries, grapes and nuts. In a small bowl whisk vanilla pudding mix with water and reserved pineapple juice until smooth. Add pudding mixture to fruit and mix gently until thoroughly coated. Refrigerate, covered, until you are ready to serve.
