A New Low Country Boil: A Dollywood Recipe


24 oz small red potatoes
4 3 inch corn on the cob pieces
8 oz smoked sausage
2 oz Old Bay Seasoning
10 oz yellow onions
20 oz small shrimp


Cook potatoes in boiling water about 5 minutes. Drain. Place 4 sheets of heavyweight sheets of Aluminum foil. Each sheet should be about 10 to 12 inches wide. On each piece of foil place two potatoes cut into quarters, 1 piece of corn cut into 2 slices, one half onion, two 2 inch pieces of sausage cut on the slant, shrimp divided equally amount the sheets. Divide Old Bay seasoning equally among the sheets Fold the long sides of each piece of foil over and fold along the top. Fold each end over to seal firmly. This may be grilled or cooked at a high temp in the oven for about 7 to 9 minutes turning once. Serve hot.
This may be cooked the old fashioned way by Boiling the potatoes and Old Bay in boiling water about 5 minutes. Cut onions into halves and add to the pot with the sausage cut into 2 inch pieces. Bring back to a boil and add the shrimp and cook about 3 additional minutes. Drain through a colander and divide into equal portions. I think the newer way is more fun
