Mama’s Dressing for Chicken or Turkey


4 cups cornbread crumbs
4 cups biscuit crumbs
2 medium onions, minced onion
4 stalks celery, cut into small pieces
2 teaspoons black pepper
2 teaspoons salt
1 teaspoon ground cayenne pepper
1 to 2 tablespoons rubbed sage
2 cups water
4 cups hot chicken or turkey broth (approximately)


Place the cut onion, celery, and water in a saucepan and bring to a boil. Place the crumbs and all other seasonings in a large mixing bowl and mix thoroughly. Add the boiling onion mixture and most of the hot broth. Mix thoroughly. The mixture should be soft but still hold its shape. Add more broth if necessary. Taste and add more seasonings if necessary. Remember, the cooked dressing will be slightly more seasoned than the uncooked mix. Place in a large flat baking dish (9x13 works nicely) And bake in a 350 deg oven until browned and firm. May be served hot, cold or warm.
