Spicy Quinoa, Cucumber, and Tomato Salad



Ingredients

- 2 cups tomatoes, diced

- 1 jalapeno, diced

- 2 Tbsp lime juice

- 1 Tbsp red wine vinegar

- 3 Tbsp olive oil

- 2 cups cucumber, diced

- 1 green onion, diced

- ½ cup cilantro, chopped

- 1 cup quinoa, cooked

- ¼ tsp salt, or to taste

- 1 avocado, sliced for serving

Directions

Combine tomatoes, jalapeño, lime juice, vinegar, and olive oil in a bowl.
Add cucumber and onion. Add quinoa and cilantro. Season with salt to taste. Serve with sliced avocado.
